Beef Tenderloin

    Prepare the Beef Tenderloin

    Preheat the oven to 200°C (400°F). Season the beef tenderloin with salt and black pepper. Heat olive oil in a skillet over high heat and sear the beef on all sides until browned. Transfer to the oven and roast for 15-20 minutes or until desired doneness. Let it rest before slicing.

Oxtail Croquette

    Cook the Oxtail

    In a pot, cover oxtail with beef stock and simmer until tender, about 3 hours. Remove meat from the bones and shred.

    Make the Filling

    In a pan, sauté onion, carrot, celery, and garlic until soft. Add shredded oxtail, season with salt and pepper, and mix well. Let it cool.

    Form the Croquettes

    Shape the mixture into small balls or patties, coat in flour, dip in beaten egg, and then coat with breadcrumbs.

    Fry the Croquettes

    Heat oil in a frying pan over medium heat. Fry croquettes until golden brown. Drain on paper towels.

Cauliflower Mushrooms & Spinach

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add cauliflower mushrooms and spinach, season with salt and pepper, and cook until the spinach is wilted and mushrooms are tender.

Truffle Pomme Purée

    Prepare the Pomme Purée

    Boil the potatoes in salted water until tender. Drain and mash with butter and heavy cream until smooth. Stir in truffle oil, salt, and pepper to taste.
