Prepare the potatoes

In a pot of salted boiling water, add the diced potatoes and cook until tender, about 15 minutes. Drain and set aside.

Prepare the brown butter

In a small saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma. Be careful not to burn it.

Cook the cod

Preheat your oven to 400°F (200°C). Place the cod filets in a baking dish, season with salt and pepper, and drizzle with brown butter and minced garlic. Bake for 12-15 minutes or until the fish flakes easily with a fork.

Steam the vegetables

While the cod is baking, steam the mixed vegetables until tender, about 5-7 minutes.

Toss the potatoes

In a bowl, combine the cooked potatoes with lemon juice, chopped parsley, salt, and pepper. Toss to coat.

Plate the cod filets alongside the parsley potatoes and steamed vegetables. Enjoy your meal!
