Cook the Macaroni
In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a large saucepan over medium heat, combine the cooked macaroni, cheddar cheese, cream cheese, milk, salt, and black pepper. Stir until the cheeses are melted and the mixture is smooth. Remove from heat and let cool slightly.

Form the Balls
Once the cheese mixture is cool enough to handle, use your hands to form small balls or patties with the mixture. Place them on a baking sheet lined with parchment paper.

Prepare for Frying
In a shallow bowl, beat the egg. In another shallow dish, place gluten-free breadcrumbs. Dip each mac and cheese ball in the egg, then roll in the breadcrumbs to coat.

Fry the Mac and Cheese Balls
In a deep skillet or frying pan, heat oil over medium-high heat. Once hot, carefully place the breaded mac and cheese balls in the oil, frying them in batches until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
