Prepare the Beef
In a slow cooker, add the beef chuck roast, onion (chopped), garlic (minced), cumin, oregano, chipotle, beef broth, salt, and pepper. Mix well.

Cover and cook on low for 8 hours or until the beef is tender and easily shredded.

Remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and mix with the juices.

In a skillet, warm the corn tortillas over medium heat until pliable.

Place a portion of the shredded beef onto each tortilla. Top with chopped cilantro, salsa verde, and a squeeze of lime.
