Prepare the Bread Pudding
Preheat your oven to 350°F (175°C). In a large bowl, combine the day-old bread, milk, heavy cream, brown sugar, eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix well until all the bread is coated. Fold in the diced apples.

Bake the Pudding
Pour the mixture into a greased baking dish and bake for 45-50 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

Prepare the Brown Sugar Ice Cream
While the pudding is baking, prepare the brown sugar ice cream by mixing 1 cup of heavy cream, 1 cup of whole milk, 3/4 cup of brown sugar, and 1 tsp of vanilla extract in an ice cream maker according to manufacturer instructions.

Prepare Cinnamon Streusel
In a bowl, mix 1 cup of flour, 1/2 cup of brown sugar, 1 tsp of ground cinnamon, and 1/4 cup of butter until crumbly.

Serve
Once the bread pudding is done, let it cool for a few minutes. Serve with a scoop of brown sugar ice cream, drizzle with apple cider caramel, and sprinkle with cinnamon streusel.
