Hallelujah Crab Directions

1. Prepare the Seafood Stuffing

In a mixing bowl, combine the seafood stuffing mix, chopped shrimp, lemon juice, and 1 tablespoon of Creole seasoning. Mix well and set aside.

2. Prepare the Crabs

Rinse the soft-shell crabs under cold water and pat them dry. Dredge each crab in a mixture of flour, cornmeal, salt, and pepper. Shake off excess.

3. Stuff the Crabs

Carefully lift the top shell of each crab and spoon in the seafood stuffing. Replace the shell and press gently to secure.

4. Fry the Crabs

In a large skillet, heat the vegetable oil over medium-high heat. In a separate bowl, whisk together the eggs and milk. Dip each stuffed crab into the egg mixture, then carefully place it in the hot oil. Fry for about 4-5 minutes on each side until golden brown. Remove and drain on paper towels.

5. Prepare the Tartar Mashed Potatoes

Boil the cubed potatoes in salted water until tender. Drain and mash with butter, salt, and pepper to taste. Mix in mayonnaise and ketchup for a tartar-style flavor.

6. Make the Creolaise Sauce

In a small bowl, mix mayonnaise with the remaining Creole seasoning to create the creolaise sauce.

7. Serve

Plate the fried soft-shell crab alongside the tartar mashed potatoes and serve with a drizzle of creolaise sauce on top.
