    Prepare the Potatoes

    Wash and cut the tricolor potatoes into even, 1-inch cubes. Boil in salted water until tender, about 10-15 minutes. Drain and set aside.

    Sauté the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the boiled potatoes and diced onion. Sauté until the potatoes are golden brown and crispy, about 10 minutes. Season with salt and pepper, then garnish with parsley.

    Prepare the Ribeye

    Take the ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes. Season both sides with salt and black pepper.

    Cook the Ribeye

    In a cast-iron skillet, heat 1 tablespoon of olive oil over high heat. When the oil is hot, add the ribeye steak. Sear for 4-5 minutes on one side, then flip it. Add butter, garlic, and thyme to the skillet. Baste the steak with the melted butter for an additional 4-5 minutes for medium-rare.

    Rest and Serve

    Remove the ribeye from the skillet and let it rest for 5-10 minutes. Slice and serve alongside the tricolor Lyonnaise potatoes.
