Prepare the Couscous
In a medium-sized pot, bring the vegetable broth to a boil. Once boiling, remove it from heat and stir in the couscous. Cover and let it sit for about 5 minutes until the couscous absorbs the broth. Fluff with a fork and set aside.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

Add the Corn and Peppers
Stir in the corn, red bell pepper, and green bell pepper. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.

Season the Mixture
Sprinkle the Cajun seasoning, salt, and black pepper over the vegetable mixture. Stir well to combine.

Combine with Couscous
Add the fluffed couscous to the skillet with the vegetables. Stir everything together and cook for an additional 2-3 minutes until heated through.

Garnish and Serve
Remove from heat, garnish with fresh parsley, and serve warm.
