Quail Preparation

    Prepare Quail Breasts

    Soak the quail breasts in buttermilk for at least 2 hours to tenderize. After soaking, season with salt and black pepper.

    Stuff Whole Quail

    Stuff each whole quail with boudin sausage, ensuring they are filled but not overstuffed. Secure openings with kitchen twine.

    Coat Quail

    Beat the eggs in a bowl. In another bowl, mix flour, cornmeal, salt, and pepper. Dip the soaked quail breasts first in the egg, then in the flour mixture to coat.

    Fry Quail

    Heat oil in a deep pan over medium heat. Fry the coated quail breasts until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.
