Bread Pudding

    Prepare the Bread Pudding

    Preheat your oven to 350°F (175°C). In a large bowl, whisk together the milk, heavy cream, eggs, sugar, vanilla extract, and lemon zest until well combined.

    Combine Ingredients

    Tear the stale bread into bite-sized pieces and add them to the egg mixture. Gently fold in the blueberries. Let it sit for about 15 minutes to allow the bread to soak up the custard.

    Bake

    Pour the mixture into a greased baking dish and bake for 40-45 minutes until the top is golden brown and a knife inserted in the center comes out clean.

    Make the Compote

    In a saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Cook until the blueberries start to break down and the mixture thickens, about 10-15 minutes.

Lemon Curd

    Prepare the Lemon Curd

    In a saucepan, melt the butter over medium heat. Whisk in the sugar until dissolved. Add the eggs, lemon juice, and lemon zest, stirring constantly until the mixture thickens and coats the back of a spoon, about 10 minutes. Pour through a sieve into a bowl to remove any lumps.
