Method

Fried Oysters

    Prepare the Oysters

    Shuck the oysters and rinse them under cold water. Pat dry.

    Make Coating Mixture

    In a bowl, whisk together flour, cornmeal, salt, and black pepper.

    Prepare Egg Mixture

    In another bowl, whisk eggs and buttermilk together.

    Coat the Oysters

    Dip each oyster in the egg mixture, then dredge in the coating mixture.

    Fry the Oysters

    In a deep skillet, heat vegetable oil over medium-high heat. Fry the oysters until golden brown, about 2-3 minutes per side.

    Drain

    Remove and drain on paper towels.

Rockefeller Creamed Spinach

    Sauté Garlic

    In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.

    Cook Spinach

    Add fresh spinach and cook until wilted. Stir in heavy cream and bring to a simmer.

    Finish Creamed Spinach

    Add Parmesan cheese, Worcestershire sauce, salt, and pepper. Stir until cheese is melted and mixture is creamy.

Pickled Fennel

    Make Brine

    In a pot, combine white vinegar, water, sugar, and salt. Bring to a boil.

    Pickle Fennel

    Pour the hot brine over the sliced fennel in a jar. Allow to cool and refrigerate for at least 1 hour.

Hot Sauce Beurre Blanc

    Make Reduction

    In a saucepan, combine white wine, shallots, and salt. Reduce over medium heat until almost evaporated.

    Add Cream

    Stir in heavy cream and cook until slightly thickened.

    Finish Sauce

    Whisk in cold butter cubes, one at a time, until sauce is creamy. Stir in hot sauce and season with black pepper.

Cajun Caviar

    Prepare Cajun Caviar

    In a bowl, combine caviar with Cajun seasoning. Set aside for serving.
