Method
Preparation of Fried Green Tomatoes

Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick rounds. Season with salt and let them sit for 10 minutes to draw out moisture.

Set Up Breading Station
In one bowl, place buttermilk. In another bowl, mix cornmeal, flour, salt, black pepper, and cayenne pepper.

Bread the Tomatoes
Dip each tomato slice into the buttermilk, then dredge in the cornmeal mixture. Set aside.

Fry the Tomatoes
Heat vegetable oil in a skillet over medium-high heat. Fry the breaded tomatoes until golden brown, about 3-4 minutes per side. Drain on paper towels.
Preparation of Blackened Shrimp

Season and Cook Shrimp
Toss shrimp with Cajun seasoning. Heat olive oil in a pan and cook shrimp over medium-high heat for about 2-3 minutes on each side until blackened and cooked through.
Preparation of Whipped Chèvre

Whip the Cheese
In a bowl, combine chèvre, heavy cream, honey, and fresh herbs. Whip until fluffy and smooth.

Caramelize Balsamic
In a small saucepan, combine balsamic vinegar and brown sugar. Simmer on low heat until thickened and syrupy, about 10-15 minutes.
Preparation of Mirliton Slaw

Mix the Slaw
In a bowl, combine julienned mirliton, shredded cabbage, shredded carrot, apple cider vinegar, olive oil, salt, and black pepper. Toss well to combine.
Assembly

Plate the Dish
On a serving plate, stack the fried green tomatoes, top with blackened shrimp, a dollop of whipped chèvre, and drizzle with caramelized balsamic. Serve with a side of mirliton slaw.
