Prepare the Olive Oil Cake
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

Mix the Dry Ingredients
In a bowl, whisk together the flour, baking powder, and salt.

Combine Mixtures
Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Bake the Cake
Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.

Make the Cream Cheese Mousse
In a bowl, beat the cream cheese until smooth. Gradually add powdered sugar and mix until combined. In another bowl, whip the heavy cream until soft peaks form, then fold into the cream cheese mixture.

Assemble the Cake
Once the cake is cooled, cut it into layers. Spread a layer of cream cheese mousse over one layer, then add another layer of cake. Repeat until all layers are assembled.

Prepare the Espresso Glaze
Mix the brewed espresso with sugar in a small saucepan over low heat until dissolved. Drizzle over the assembled cake.

Top the cake with cocoa crumb and any remaining mousse. Slice and serve chilled.
