Herb Compound Butter

    Prepare the Herb Compound Butter

    In a bowl, combine the softened unsalted butter, parsley, chives, thyme, minced garlic, lemon zest, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Shape and Chill

    Transfer the herb butter onto a sheet of plastic wrap. Roll it into a log shape, twist the ends to seal, and refrigerate until firm.

Lyonnaise Potatoes

    Prepare the Potatoes

    Wash and halve the tricolor baby potatoes. In a pot, bring salted water to a boil and add the potatoes. Cook until tender, about 10-12 minutes. Drain and set aside.

    Sauté the Potatoes

    In a skillet, heat olive oil over medium heat. Add the sliced onions and sauté until translucent, about 5 minutes. Add the cooked potatoes, salt, and black pepper. Cook until potatoes are golden and crispy, about 8-10 minutes.

Cooking the Tenderloin

    Cook the Tenderloin

    Season the 44 Farms Tenderloin with salt and black pepper. Heat a skillet over high heat and add a bit of oil. Sear the tenderloin for about 4-5 minutes on each side for medium-rare. Remove from heat and let it rest for a few minutes.

    Serve

    Slice the tenderloin and top with a slice of the herb compound butter. Serve alongside the tricolor Lyonnaise potatoes.
