Roasting the Duck

Prepare the Duck
Preheat your oven to 375°F (190°C). Rinse the duck half under cold water and pat dry with paper towels. Score the skin in a diamond pattern, being careful not to cut into the meat.

Simmer
Add thyme, bay leaf, and water. Simmer for 2 hours, skimming any foam that rises to the surface.

Strain
Strain the sauce through a fine-mesh sieve, discarding solids. Return the sauce to the pan and reduce over medium heat until thickened.
Making Spiced Orange Sauce

Combine Ingredients
In a saucepan, combine fresh orange juice, orange zest, cinnamon stick, honey, grated ginger, and salt.

Simmer
Simmer over low heat for about 15 minutes, stirring occasionally until slightly thickened. Remove the cinnamon stick.
Serving

Plate the Dish
Slice the roasted duck and serve with Duck Espagnole and Spiced Orange Sauce drizzled on top.
