    Prepare the Fish

    Preheat the oven to 375°F (190°C). Pat the fish fillets dry and season with salt and black pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the fish for 2-3 minutes on each side until golden brown. Then transfer the skillet to the oven and bake for 10 minutes or until cooked through.

    Make the Tartar Mashed Potatoes

    In a large pot, boil the potatoes in salted water until tender, about 15 minutes. Drain and return to the pot. Add butter, heavy cream, salt, black pepper, and chives. Mash until smooth and creamy. Adjust seasoning to taste.

    Prepare the Beurre Blanc Sauce

    In a saucepan, combine white wine and shallots. Simmer over medium heat until reduced to about 2 tablespoons. Add heavy cream and simmer for an additional 2 minutes. Gradually whisk in the cold butter until the sauce is smooth. Season with salt and white pepper.

    Serve

    Plate the fish on a bed of tartar mashed potatoes and drizzle with beurre blanc sauce. Garnish with additional chives if desired.
