    Prepare the potatoes

    Boil the diced potatoes in salted water until tender, about 10 minutes. Drain and set aside.

    Sauté the vegetables

    In a large skillet, heat olive oil over medium heat. Add the diced onion, red and green bell peppers, and cook for about 5 minutes until softened.

    Add garlic and spices

    Stir in the minced garlic, paprika, cayenne pepper, salt, and black pepper. Cook for another minute until fragrant.

    Combine crawfish and potatoes

    Add the boiled potatoes and crawfish tails to the skillet. Stir gently to combine and cook for about 5-7 minutes until the crawfish are heated through.

    Finish and serve

    Remove from heat, stir in chopped parsley, and serve hot with lemon wedges on the side.
