Prepare the Apple Jam
In a saucepan over medium heat, combine chopped apples, brown sugar, and a pinch of salt. Cook until the apples are soft and the mixture is jam-like, about 15 minutes. Set aside.

Cook the Pork Belly
Season the pork belly with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the pork belly on all sides until golden brown and cooked through, about 15-20 minutes. Remove and let rest.

Make the Butternut Squash Puree
Peel and cube the butternut squash. Boil in salted water until tender, about 15 minutes. Drain and blend with butter until smooth. Season with salt and pepper to taste.

Assemble the Dish
On a plate, spread a layer of butternut squash puree, place the sliced pork belly on top, add a generous spoonful of apple jam, and arrange the crispy Brussels sprouts on the side. Serve immediately.
