Prepare the Mussels
Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Remove the beards if necessary.

Cook the Sausage
In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.

Add Aromatics
Stir in the chopped fennel and minced garlic, and cook for another 3-4 minutes until the fennel is softened.

Incorporate Tomatoes and Wine
Add the Groundworks tomatoes, white wine, salt, and black pepper to the pot. Stir to combine, and bring the mixture to a simmer.

Cook the Mussels
Add the rinsed mussels to the pot, cover with a lid, and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.

Finish and Serve
Stir in the chopped parsley, adjust seasoning if necessary, and serve hot with crusty bread.
