Preparation Steps

    Roast the Garlic

    Preheat your oven to 200°C (400°F). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft.

    Sauté the Mushrooms

    In a skillet, heat 2 tbsp of olive oil over medium heat. Add the wild mushrooms, season with salt and pepper, and sauté for about 5-7 minutes until tender.

    Prepare Parmesan Cream

    In a small saucepan, combine the heavy cream and grated parmesan cheese over low heat. Stir until the cheese melts and the sauce is creamy. If needed, season with a little salt and pepper.

    Combine Ingredients

    Once the garlic is roasted, squeeze the cloves out of their skins and mix them into the sautéed mushrooms. Add the arugula and toss until just wilted.

    Serve

    Plate the mushroom mixture and drizzle with the parmesan cream and truffle oil. Serve immediately.
