    Prepare the Salmon

    Season the Faroe Island salmon fillets with salt, black pepper, and a little olive oil. Let them sit for about 10 minutes to absorb the flavors.

    Make the Puttanesca Sauce

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add diced tomatoes, capers, black olives, and red pepper flakes. Stir and let simmer for about 10 minutes until the sauce thickens slightly.

    Cook the Salmon

    In another skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the salmon fillets skin side down and cook for about 4-5 minutes. Flip the fillets and cook for another 3-4 minutes, or until cooked through.

    Combine and Serve

    Once the salmon is cooked, pour the puttanesca sauce over the top. Garnish with shaved fennel and fresh basil. Serve immediately.
