Preparing Eggplant Fries

    Cut the eggplant into long, thin strips resembling fries.

    In a large bowl, toss the eggplant strips with olive oil, salt, black pepper, and garlic powder until evenly coated.

    In a separate bowl, combine panko breadcrumbs and grated Parmesan cheese.

    Dredge the seasoned eggplant strips in the breadcrumb mixture, ensuring they are fully coated.

Making Pomodoro Sauce
