Preparing Chicken Cutlet

Pound the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness.

Set Up Breading Station
In three separate bowls, place flour, beaten eggs, and a mixture of breadcrumbs and grated Parmesan cheese.

Bread the Chicken
Dredge each chicken breast in flour, dip in egg, and then coat with the breadcrumb mixture.

Fry the Chicken
Heat olive oil in a large skillet over medium heat. Add the breaded chicken cutlets and fry until golden brown, about 4-5 minutes per side.
Making Vodka Sauce

Add Tomatoes and Vodka
Stir in crushed tomatoes and vodka. Simmer for 10 minutes.

Finish the Sauce
Add heavy cream, salt, black pepper, and fresh basil. Stir and simmer for another 5 minutes.
Serving

Plate the Dish
Place the fried chicken cutlet on a plate and spoon the vodka sauce over the top. Serve immediately.
