Prepare the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper. Grill the chicken for about 6-7 minutes per side or until fully cooked. Let it rest for a few minutes before slicing.

Make the Parmesan Crisp
Preheat the oven to 400°F (200°C). On a baking sheet lined with parchment paper, place small mounds of grated Parmesan cheese (about 2 tablespoons each) and flatten them slightly. Bake for 5-7 minutes or until golden brown. Remove from oven and let cool.

Prepare the Sandwich
Toast the rosemary focaccia slices until golden brown. Spread a generous amount of pesto on one side of each slice. Layer the sliced grilled chicken, crispy bacon, tomato slices, and thinly sliced red onion on one slice. Top with the other slice, pesto side down.
