Prepare the Mashed Potatoes
Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Roast the Garlic
While the potatoes are boiling, roast the garlic. Wrap the garlic cloves in aluminum foil with a drizzle of olive oil, and roast in a 400°F (200°C) oven for 20-25 minutes until soft.

Mash the Potatoes
Drain the potatoes and return them to the pot. Squeeze the roasted garlic out of its skins into the potatoes. Add butter, salt, and pepper, then mash until smooth and creamy.

Cook the Salmon
Heat a large skillet over medium-high heat and add olive oil. Season the salmon fillets with salt and pepper. Place the fillets skin-side down in the hot skillet and cook for 4-5 minutes until crispy. Flip and cook for an additional 3-4 minutes until cooked through.

Make the Honey-Thyme Glaze
In the last minute of cooking the salmon, drizzle the honey and sprinkle the fresh thyme over the fillets. Allow it to caramelize slightly.
