    Cook the Udon Noodles

    Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions until tender. Drain and set aside.

    Prepare the Sauce

    In a small bowl, mix together soy sauce, mirin, sesame oil, garlic, and ginger. Set aside.

Cooking

    Stir-Fry the Vegetables

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the bell pepper, carrot, green onion, and mushrooms. Stir-fry for about 5 minutes until the vegetables are tender.

    If using, add the diced tofu or chicken to the skillet. Cook until the protein is heated through or cooked, about 5-7 minutes.

    Add the cooked udon noodles and the sauce to the skillet. Toss everything together and stir-fry for another 2-3 minutes until heated through. Adjust seasoning with more soy sauce if desired.
