Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear, then drain.

In a rice cooker or saucepan, combine the rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

Once cooked, transfer rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture into the warm rice gently without smashing the grains. Allow to cool slightly.
