Prepare Sushi Rice

Cook the Rice
Rinse sushi rice under cold water until water runs clear. Combine the rice and water in a pot, bring to a boil, then cover and reduce to low heat for 20 minutes. Remove from heat and let it sit for another 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Heat in the microwave for 30 seconds or until sugar dissolves. Gently fold the mixture into the cooked rice and let it cool.
Assemble the Rolls

Roll the Sushi
Place a nori sheet on a bamboo sushi mat, shiny side down. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Lay crab sticks, avocado, and cucumber in a line along the bottom edge of the rice. Using the mat, tightly roll the sushi away from you, pressing gently to form a tight roll.

Cut and Serve
Using a sharp knife, slice the roll into 8 pieces. Drizzle spicy mayo and eel sauce over the top, and add sriracha and black sesame seeds to taste.
