Marinate the Chicken

In a bowl, combine soy sauce, sake, mirin, minced garlic, grated ginger, and salt. Add the chicken thighs, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Coating

In a separate bowl, mix the all-purpose flour, cornstarch, and baking powder. Take the marinated chicken and coat each piece thoroughly in the flour mixture.

Fry the Chicken

In a deep pan or pot, heat the vegetable oil to 180°C (350°F). Carefully add the coated chicken pieces in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

In a bowl, place a serving of cooked Japanese rice. Top with the crispy chicken karaage, chopped green onions, shredded nori, and sesame seeds. Serve immediately and enjoy!
