    Prepare the Noodles

    Soak the rice noodles in warm water for about 30 minutes until softened. Drain and set aside.

    Cook the Tofu

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add cubed tofu and cook until golden brown on all sides. Remove from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, add another tablespoon of oil. Crack the eggs into the skillet and scramble until just set. Push the eggs to the side.

    Sauté the Aromatics

    Add the remaining tablespoon of oil, then add minced garlic and sliced green onions. Sauté for about 1 minute until fragrant.

    Combine Ingredients

    Add the soaked noodles, cooked tofu, soy sauce, tamarind paste, and sugar to the skillet. Toss everything together and cook for another 2-3 minutes until heated through.

    Add Bean Sprouts

    Stir in the bean sprouts and cook for an additional minute. Remove from heat.

    Serve

    Serve the Pad Thai hot, garnished with crushed peanuts and lime wedges on the side.
