    Prepare the Ingredients

    Dice the chicken, carrots, potatoes, and onion. Mince the garlic and ginger.

    Sauté the Vegetables

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent. Add the garlic and ginger, and sauté for another minute.

    Cook the Chicken

    Add the diced chicken thighs to the pot. Cook until the chicken is browned on all sides.

    Add Vegetables and Water

    Stir in the diced carrots and potatoes. Pour in the water and bring to a boil.

    Add Curry Roux

    Once boiling, reduce the heat to low and add the Japanese curry roux. Stir until the roux is completely dissolved.

    Cover and let the curry simmer for about 20 minutes, or until the vegetables are tender.
