California Roll Preparation
Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or saucepan and cook according to package instructions. Once cooked, let it sit for 10 minutes off the heat.
Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked sushi rice using a wooden spoon or rice paddle. Allow the rice to cool to room temperature.
Assemble the Roll
Place a bamboo sushi mat on a flat surface. Lay one sheet of nori shiny side down on the mat. Wet your hands to prevent sticking and grab a handful of sushi rice. Spread the rice evenly over the nori, leaving a small border at the top. Place the cucumber, avocado, and imitation crab meat in a line along the bottom edge of the rice.
Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Moisten the top edge of the nori with a little water to seal the roll. Repeat this process with the remaining nori sheets and fillings.
Slice and Serve
Using a sharp knife, slice each roll into 8 pieces. Wipe the knife with a damp cloth between cuts for clean slices. Sprinkle sesame seeds on top if desired. Serve with soy sauce, wasabi, and pickled ginger.
