Prepare the Noodles
Cook the udon noodles according to package instructions. Drain and set aside.

Chop the Vegetables
While the noodles are cooking, slice the bell pepper and carrot into thin strips. Chop the broccoli into smaller florets and slice the green onions.

Heat the Pan
In a large skillet or wok, heat the vegetable oil over medium-high heat.

Sauté Aromatics
Add minced garlic and ginger to the hot oil, sauté for about 30 seconds until fragrant.

Add Vegetables
Add the sliced bell pepper, carrot, and broccoli. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Combine Noodles and Sauce
Add the cooked udon noodles to the skillet along with soy sauce, oyster sauce, and sesame oil. Toss everything together to combine well.

Season and Serve
Season with salt and pepper to taste. Stir in the green onions just before serving. Serve hot.
