Marinate the Chicken

In a bowl, combine soy sauce, sake, mirin, garlic, ginger, and salt. Cut the chicken thighs into bite-sized pieces and add to the marinade. Mix well and let marinate for at least 30 minutes, preferably 1 hour.

Prepare Rice

Rinse the Japanese rice under cold water until the water runs clear. Add the rice and water to a rice cooker and cook according to the manufacturer's instructions.

Prepare the Breading

In a bowl, whisk together cornstarch, all-purpose flour, egg, and water until smooth. Set aside.

Fry the Chicken

Heat vegetable oil in a deep pan over medium-high heat. Remove chicken from marinade, dip each piece into the batter, and carefully place in hot oil. Fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

In a bowl, place a generous serving of rice. Top with crispy chicken, shredded cabbage, green onions, pickled ginger, and sprinkle with sesame seeds. Serve immediately and enjoy!
