Cook the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool slightly.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture gently into the warm rice to season it. Let it cool to room temperature.

Prepare the Filling

Slice the avocado and cucumber into thin strips. In a small bowl, mix the imitation crab meat with sriracha sauce and mayonnaise.

Roll the Sushi

Place a nori sheet, shiny side down, on a bamboo sushi mat. Wet your hands to prevent sticking and spread about 1/4 of the sushi rice evenly over the nori, leaving a 1-inch border at the top. Place the crab mixture, cucumber, and avocado in a line along the bottom edge of the rice.

Form the Roll

Using the mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight. When you reach the border, dampen it with a little water to seal the roll.

Slice the Roll

Using a sharp knife, slice the roll into 8 pieces. Wipe the knife with a wet cloth between cuts for cleaner slices.

Serving

Garnish and Serve

Sprinkle sesame seeds over the sushi rolls. Serve with soy sauce for dipping.
