    Prepare the Ingredients

    Start by preparing all the vegetables and chicken. Dice the onion, slice the carrot, and cube the potato and chicken.

    Sauté Vegetables

    In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent.

    Add Chicken and Vegetables

    Add the cubed chicken to the pot and cook until browned. Then add in the sliced carrots and diced potatoes, stirring to combine.

    Add Liquid and Curry Powder

    Pour in the water and bring to a boil. Once boiling, reduce the heat and add the Japanese curry powder and soy sauce. Stir well to combine.

    Simmer

    Cover and let the curry simmer for about 20-25 minutes, or until the vegetables are tender and the chicken is cooked through.

    Serve

    Serve the curry over steamed rice and garnish with sliced green onions as desired.
