Make the Filling
In a mixing bowl, combine the ground chicken with chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.

Assemble the Gyoza
Place a gyoza wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center of the wrapper. Moisten the edges of the wrapper with water, fold it in half, and pinch to seal. Make pleats along the edge for a decorative touch. Repeat with the remaining wrappers and filling.

Pan-Fry the Gyoza
Heat a non-stick skillet over medium heat and add a small amount of oil. Once hot, place the gyoza in the skillet and cook for about 2-3 minutes or until the bottoms are golden brown. Carefully add about 1/4 cup of water to the skillet, cover with a lid, and steam for about 4-5 minutes until the water has evaporated and the gyoza are cooked through.

Serve
Remove the gyoza from the skillet and serve hot with your choice of dipping sauce, such as soy sauce or vinegar.
