In a bowl, combine the ricotta cheese, honey, and a pinch of salt. Mix well until smooth. Set aside.

In a small saucepan over medium heat, combine blueberries, lemon juice, and sugar. Cook until the blueberries begin to burst and the mixture thickens slightly, about 5-7 minutes. Set aside.

In a shallow bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until well combined.

Assemble the French Toast
Spread a generous amount of the ricotta mixture on one slice of brioche and top with another slice to create a sandwich. Repeat with remaining slices.

Heat butter in a large skillet over medium heat. Dip each sandwich in the egg mixture, allowing excess to drip off, then place in the skillet. Cook for about 3-4 minutes on each side or until golden brown.
