Cheese Making Process
1. Prepare the Milk
In a large pot, heat the whole milk over medium heat until it reaches about 190°F, stirring occasionally to prevent scorching.
2. Curdle the Milk
Once the milk is heated, remove it from the heat and stir in the white vinegar. Let it sit for about 10 minutes to allow the curds to form.
3. Strain the Curd
Line a colander with cheesecloth and pour the curdled milk mixture into it. Allow the whey to drain for about 30 minutes.
4. Season the Cheese
Once the curds are drained, transfer them to a bowl, add salt and any optional herbs, and mix gently.
5. Mold the Cheese
Press the curds into a mold or shape them by hand. If you prefer a firmer cheese, press down firmly to compact the curds.
6. Chill and Serve
Place the molded cheese in the refrigerator for at least 1 hour to set. Once chilled, slice and serve as desired.
