    Prepare the Apples

    Wash and core the apples, then cut them into quarters.

    Juicing

    In a large pot, combine the quartered apples and water. Heat over medium heat until the apples are soft, about 30 minutes. Mash the apples to release their juice.

    Strain the Juice

    Using a fine mesh strainer or cheesecloth, strain the mixture to extract the fresh apple juice into a clean container. Discard the solids.

    Add Sugar and Spices

    Stir in the sugar, cinnamon sticks, and cloves into the fresh apple juice until the sugar is dissolved.

    Fermentation

    Allow the mixture to cool to room temperature, then add the yeast. Cover the container with a clean cloth and secure it with a rubber band. Let it ferment in a dark, cool place for about 1-2 weeks.

    Bottling

    After fermentation is complete, strain the cider again to remove any sediment. Pour into bottles, leaving some space at the top. Seal the bottles tightly.

    Aging

    Store the bottles in a cool place for at least 1 month to allow flavors to develop. Drink unfiltered for a true 'down east' experience.
