Cook the Pasta
Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Sauté the Shallots and Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 2-3 minutes. Add the sliced mushrooms and cook until they are browned and tender, about 5-7 minutes.

Combine Everything
Add the fresh peas to the skillet with mushrooms and shallots. Cook for an additional 2-3 minutes until the peas are tender. Then, add the cooked pappardelle to the skillet, along with the reserved pasta water and truffle oil. Toss everything together to combine.

Serve
Season with salt and black pepper to taste. Serve hot, topped with grated Pecorino cheese.
