    Make the Ginger Syrup

    Peel and slice the fresh ginger root into thin pieces. In a medium saucepan, combine the ginger slices, granulated sugar, and water. Bring the mixture to a boil over medium heat, stirring until the sugar is dissolved. Once boiling, reduce the heat to low and let it simmer for about 30 minutes.

    Strain the Syrup

    After simmering, remove the saucepan from heat. Let it cool for a few minutes, then strain the mixture through a fine mesh strainer or cheesecloth into a clean bowl, discarding the ginger pieces. Stir in the lemon juice.

    Mix Ginger Ale

    In a large pitcher, combine the ginger syrup with sparkling water. Adjust the ratio of syrup to sparkling water based on your taste preference. Stir gently to combine.

    Fill glasses with ice cubes, pour the ginger ale mixture over the ice, and serve immediately. Optionally, garnish with a slice of lemon or fresh mint.
