    Prepare the Spinach

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the spinach and cook until wilted. Season with salt and pepper. Set aside.

    Poach the Eggs

    In a pot of simmering water, crack the eggs one at a time into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.

    Prepare the Romesco Base

    In a separate skillet, heat the romesco sauce over low heat. Stir in chili flakes and let it simmer for a few minutes.

    Assemble the Dish

    On a serving plate, spread a layer of the warmed romesco sauce, then add the sautéed garlic spinach on top. Place the poached eggs over the spinach.

    Garnish and Serve

    Crumble feta cheese and sprinkle grated parmesan over the top. Add fresh basil leaves and additional chili flakes if desired. Serve with grilled bread drizzled with olive oil.
