Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Once melted, remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip. Set aside.

Beat the Egg Whites
In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar and continue to beat until stiff peaks form.

Combine Ingredients
Once the chocolate has cooled slightly, fold in the whipped cream gently until combined. Then, fold in the beaten egg whites in three additions until no white streaks remain.

Chill the Mousse
Spoon the mousse into individual serving cups or bowls. Chill in the refrigerator for at least 2 hours or until set.

Serve
Before serving, top each mousse with additional whipped cream and garnish with chocolate shavings.
