    Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick.

    Soaking

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

    Drying

    Drain the potatoes and pat them dry with a clean towel to remove excess moisture.

    Heating Duck Fat

    In a large, heavy-bottomed pot, heat the duck fat over medium heat until it reaches 350°F (175°C).

    Carefully add the dried potato strips to the hot duck fat in batches. Fry for about 5-7 minutes or until golden brown and crispy.
