Steak Preparation

Prepare the Steak

Season the beef tenderloin with salt and crush black peppercorns, pressing them onto the steak. Heat olive oil in a skillet over medium-high heat and sear the steak for about 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing.

Potato Puree Preparation

Make the Potato Puree

Peel and cut the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and mash the potatoes in a bowl. Stir in butter, heavy cream, and salt to taste until smooth and creamy.

Wild Mushroom Madera Demi Preparation

Prepare the Sauce

In the same skillet used for the steak, melt 1 tablespoon of butter and add chopped shallots. Sauté until translucent, then add wild mushrooms and cook until tender. Pour in the Madera wine and let it reduce by half. Add beef stock and simmer until slightly thickened. Season with salt and black pepper.
