    In a small bowl, combine warm milk and yeast. Let it sit for about 5-10 minutes until frothy.

    In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, baking soda, and xanthan gum.

    Make a well in the center of the dry ingredients. Add the activated yeast mixture, melted butter, and egg. Mix until a dough forms.

Shaping and Cooking

    Turn the dough onto a floured surface and gently knead for a minute. Divide the dough into 6 equal pieces and shape each into a round muffin.
