    Prepare the Snapper Collars

    Rinse the snapper collars under cold water and pat them dry with paper towels. Season both sides generously with Jamaican jerk seasoning and a pinch of salt.

    Make the Chili Butter

    In a small saucepan, melt the butter over medium heat. Once melted, add the minced garlic and chili flakes. Sauté for about 2 minutes until fragrant, then remove from heat and stir in the lime juice.

    Cook the Snapper Collars

    Preheat a grill or grill pan over medium-high heat. Grill the snapper collars for about 4-5 minutes per side, or until they are cooked through and have nice grill marks.
