Prepare the Slaw
In a large bowl, combine collard greens, grated carrot, and thinly sliced red onion. In a separate bowl, whisk together apple cider vinegar, olive oil, honey, salt, and black pepper. Pour the dressing over the greens and toss to combine. Set aside.

Make the Spiced Honey
In a small saucepan over low heat, combine honey, cayenne pepper, paprika, and a pinch of salt. Stir until warm and well mixed. Remove from heat and set aside.

Prepare the Catfish
In a shallow bowl, whisk together the eggs and buttermilk. In another shallow bowl, mix cornmeal, flour, cayenne pepper, paprika, salt, and black pepper. Dip each catfish fillet into the buttermilk mixture, then dredge in the cornmeal mixture.

Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, fry the catfish fillets in batches until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.

On each sandwich bun, place a fried catfish fillet, top with collard green slaw, a drizzle of spiced honey, and pickles. Serve immediately.
