    In a separate glass, add the absinthe and swirl it around to coat the interior, then discard the excess absinthe.

    Mix the Cocktail

    In a mixing glass filled with ice, combine the rye whiskey, Peychaud's bitters, and simple syrup. Stir until well chilled.

    Strain and Serve

    Empty the ice water from the chilled glass. Strain the mixed cocktail into the prepared glass.

    Garnish

    Express the oils from the lemon peel over the drink and place it in the glass as a garnish.
